Marinated Bocconcini with Chilli, Orange, Basil and Poppy Seeds

Does an Italian caprese suit to South Africa? Okay, you can have a caprese all day, but we have asked ourselves if there is no other way preparing it. We have found an African way with Chilli, Orange and Basil for our Guesthouse, Candlewood.

  • Fior di latte mozzarella 2 balls
  • Poppy seeds 1 t
  • Bird’s-eye chillies 2, halved
  • Fresh basil ¼ cup, roughly chopped
  • Chives ¼ cup, snipped
  • Dill ¼ cup, roughly chopped
  • Extra virgin olive oil ¾ cup
  • Verjuice 4 T
  • Small orange 1, thinly sliced
  • Honey 1 t
  • Sea salt and freshly ground
  • black pepper, to taste

Method

  1. Make a marinade by heating all the ingredients except for the mozzarella.
  2. Whisk together and allow to chill in the fridge.
  3. Roughly tear the mozzarella and place in a bowl.
  4. Pour the marinade over the mozzarella, coating it thoroughly.
  5. Cover and chill for a day.
  6. This salad is delicious on its own or tossed into fresh watercress with its marinating juices.
